By listing the options under a choice field you can limit the number of times each choice can be selected.
Since you want this limitation to be applied based on the date selected, I would suggest you create a choice field for each possible date. Using conditional rules, you can display the correct choice field based on the date selected.

We want to create a form that gives the view a number of options to choose from but have the inventory of those options limited. So, for instance, if they wanted to add a motorcycle rental to their experience purchase on a given date, we only want to have 4 customers who could add that rental on that particular day. Once all 4 have been rented, we want it to show as SOLD OUT.
